The acute 15 degree cutting edge is hand ground on to Cromova18 Stainless Steel with a Rockwell of C56-58. - Always hand wash knives, dry and put back in to storage. This prevent the blade getting damaged. Do not soak in water or leave damp. Global knives are not dishwasher safe.
- Always use on a wooden or plastic surface. Cutting on marble, glass, granite or any other hard surface will blunt your knife.
- Don't use to cut through frozen foods or bones unless the knife is specifically designed for the job, i.e a cleaver.
