Apple & Blackberry Crumble

  • Preparation Time: 10 minutes
  • Cooking time: 35 minutes
  • Serves 4
  • 4 Petite Casseroles or 1 Medium Baking Dish
INGREDIENTS


Crumble Topping
 

  • 70g gluten-free flour
  • 50g gluten-free oats
  • 70g warmed coconut oil
  • 50g coconut sugar or brown sugar


Filling 

  • 5-6 medium sized apples - peeled, cored and cubed
  • 100g blackberries - fresh or frozen
  • 1 tablespoon lemon juice
  • 1 tablespoon vanilla extract or seeds from vanilla pod
  • 1 teaspoon cinnamon
  • 1 tablespoon warmed coconut oil

 

INSTRUCTIONS

Preheat oven to 180°C/ Gas mark 4. For fan assisted ovens you may need to reduce the temperature by 10-20 degrees. Combine flour, oats and coconut oil in a medium sized bowl. Using your fingers, mix ingredients to create a breadcrumb consistency.

  • Add sugar and mix with spoon.
  • In a separate bowl, combine the filling ingredients.
  • Spoon the apple filling into petite casserole or one medium dish.
  • Spoon over the crumble topping mixture.
  • Bake for 35 minutes until apples have softened. Serve with coconut cream or dairy free ice cream.

 Cook's Notes

 Oats that are listed as gluten free still contain a form of protein similar to gluten known as Avenin, this substance may affect a very small number of people who are coeliac.
